Sneaky Veggie Mac and Cheese

Here’s a super fast lunch recipe. I have an SPD four year old that has to have his food in a very specific way. Every time. He very rarely tries new foods. He eats zero vegetables if he can see them. Zero. It makes this food-loving mama craaazy.

You can use any form of macaroni and cheese. Kraft was all we had on hand. I usually buy whole grain or organic when I find it. Cook the noodles as directed. The goal of the final product is to look, taste and smell like his ‘normal’ macaroni. After the noodles were done, I drained it. Mixed in 4 tablespoons of grass fed butter (good for his teeth), the cheese and half of two baby food pouches (Earth’s Best sweet potato and beets, and carrots and broccoli). The carrots and broccoli pouch is pretty strongly scented, but he still ate it. So it was a win!

You can also puree any form of veggies. Spinach, kale, peas, pumpkin, squash, etc and just mix it in!
